Riti's Thai Soup

Simple ingredients that still gives a wholesome Thai Soup taste.
INGREDIENTS
- 1 X finely diced large onion,
- 1 X finely sliced leek
- 1 X a good sized knob of ginger finely grated
- half the amount of tumeric root to ginger root, finely grated
- 3 X chopped cloves of garlic
- 1 X teaspoon of curry powder
- (optional add chilli or cayenne pepper to taste)
- 2 cups of any chopped vegetables you have on hand
- 3 to four carrots, ( pumpkin or sweet potatoe can be subbed)
- 2 teaspoons of stock powder
- 250gms soba noodles
- 1 x 400ml tin coconut milk
- Fresh parsley/coriander to garnish
METHOD
- A splash of olive oil in the pot.
Add;
- finely diced large onion,
- finely sliced leek
- a good knob of ginger finely grated
- half the amount of turmeric root finely grated
- 3 chopped cloves of garlic
- 1 teaspoon of curry powder
- (optional add chilli or cayenne pepper to taste)
Grate;
- 3 to four carrots, ( pumpkin or sweet potato can be subbed)
Add;
- Other vegetables of choice can be added now, beans, spinach, cabbage, capsicum etc
STIR
Add;
- water or stock just to cover
- 2 teaspoons of stock powder
- 1 teaspoon of salt
Cook for 20 minutes
Add;
- soba noodles at end
- soba noodles at end
- coconut milk, do not cook, just warm this through.
Taste and see what it needs.
Garnish with fresh herbs.
